Crock Pot Wonder

Cooking for one, by yourself, everyday, every meal can get annoying.  So much work involved- shopping, chopping, cutting, boiling, sauteeing, cleaning, dish washing etc.  And when you’re only cooking for yourself (and a begging pup) sometimes the novelty of preparing a delicious meal goes to … take out.

But I’ve been trying to cook more, and take-out less.  Last week I bought a crock pot, or as some tastefully refer to as a slow cooker.  I got it at Costco for under $25.  My thinking was:  make a whole lot of something (that will last you many meals), wash as little dishes as possible (thank you one pot wonder), and cook as little as possible.  All of which could be made possible by a crock pot.

Chili would be its maiden dish.  I chose this recipe from Real Simple.  “Slow cooker vegetarian chili with sweet potatoes.”  Vegetables, protein and carbs in one pot- great.

Prepping was minimal, as almost half the ingredients come from a can (black beans, kidney beans, corn, diced tomatoes).  Do as little work as possible- check!  I used a big bowl for all the waste.  Its convenient to chop on a board, and then dispose the waste directly beside it.  Or convenient for peeling potatoes over.  Or measuring spices over.  All of your mess in one place, making clean up as quick as possible.  Check!

    what recipe did you use for this? i recently bought a crock pot too and have yet to use it cuz i needed to find recipes. i just bought a crock pot cook book at kohls and i’m looking forward to using it!

    You should make chicken adobo! I love making that in the crock pot! The hardest thing is cutting the onions, which I always have the worst trouble cutting!
